With the Australian Men’s Cricket Team currently playing the West Indies in Hobart. We thought it was a great excuse to round up some of our favourite tropical treats for summer to celebrate. So here they are, some of our favourite mouth watering summer treats, honouring our friends from the Tropics. Enjoy!
Watermelon Icy Poles
19 oz cubed seedless watermelon (about 3 1/2 cups)
5 1/2 Tbsp granulated sugar, divided
1 Tbsp fresh lemon juice
1/2 cup canned coconut milk, well shaken
13 oz kiwi (about 6 medium)
1 Tbsp mini chocolate chips
Savoury Zucchini Hummus

This will make 6 servings1 cup peeled, and chopped zucchini
3 tablespoons olive oil (or coconut)
1 tsp paprika
1/4 tsp cumin
6 tablespoons raw tahini
3 tablespoons lemon juice
2 tsp crushed garlic
1 tsp himalayan salt pinch cayenne
6 tablespoons sesame seeds, soaked 4hrs, drained and rinsed.
Place all of the ingredients into your food processor and process until a nice smooth texture.
Fruit Platter Tropical Style
Super simple! Kiwi fruit, banana and mandarin. Arrange into a gorgeous palm tree setting. EASY!
Coconut Yoghurt Pop
1 cup pineapple, fresh or frozen
1 cup coconut milk, canned light
1 tbsp sugar nuts & seeds
3/4 tsp coconut extract
2 (5.3 oz) containers pineapple yoghurt, non fat.
Non Alcoholic Mojito
1/2 cup frozen mango chunks
1/2 Lime thinly sliced
Sprig of mint
Add your own water, preferably filtered
This is a vegetarian’s best friend. Cut fruit into small pieces and glide onto long kebab sticks.
